Crock Pot Taco Chicken

Ingredients
2lbs Chicken Breasts frozen
1/4c Cumin
1/8c Smoked Paprika
1TBSP Salt
6 xl Vidalia Onions
6 colored sweet peppers
Optional: 1 XL can of Rotel

Directions
Turn on crock pot to slow cook for 6 hours (if you aren't going to be home, you can change this to 8 hours).

Cut ends from onion, cut in half. Cut each half into chunky onion ribbons - no need to separate. Drop all onion into bottom of crock pot. Drop in chicken. Add all spices to top of chicken. Let cook for 2 hours. Add peppers to top of chicken. Finish cooking in crock pot. When done, pull out chicken and shred. Place chicken back into crock pot and stir everything together. 

We had taco salad bowls with this chicken. We served it with warmed refried beans, pre-cooked Cilantro Lime Rice from Costco, Trader Joe's Fire Roasted Corn, shredded sharp cheese, spinach, sour cream and salsa with a few chips on top. 

NOTES
This recipe is for meal prep. If its just you or you just need a smaller portion, you can half everything.
